On my previous post of easy to cook recipes, i gave some info’s and ideas about this dish named “Adobo” and I also showed you how easy it is to cook a Pork Adobo. For now, I’m gonna show various types of “Adobo Recipes” with different ingredients since Adobo is one of the simple cooking recipes that you can find on the internet but very famous in the Philippines. What im gonna show you now is how to cook a “Chicken Adobo”. Yes, its chicken not pork like what I’ve showed on the previous post. This is also a very easy to cook recipes like Pork Adobo and the only difference is the ingredients of this is chicken. Ok, here it is:
Ingredients:
1 tablespoon vegetable oil
6 bone-in, chicken thighs
1/4 of a medium onion (chopped)
3 cloves garlic, minced
2/3 cup white vinegar
1/3 cup soy sauce
1 teaspoon whole black peppercorns
2 bay leaf
Cooking Procedure:
1. Heat oil in a medium frying pan over medium heat. Add chicken and fry until lightly browned. Transfer the chicken to a plate and set aside.
2. Put vinegar, onion, garlic bay leaves, pepper, soy sauce, and water in a saucepan. Cover and cook slowly about 15 minutes. Return chicken to pan and cook, covered, for 20 minutes.
3. Uncover, increase heat to medium-low and cook 15 to 20 minutes more, occasionally spooning sauce over chicken, until sauce thickens a bit and chicken is tender and nicely glazed with sauce. Remove bay leaf before eating.
